Summer Pineapple Salsa
- 1 pineapple, chopped
- 2 mangoes, chopped
- 1 avocado, chopped
- 1 tbsp fresh mint, chopped
- 2 tbsps fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- Juice of 1 lime
- 1/2 tbsp agave
- Pinch of salt and pepper
Combine pineapple, mango, and red onion in a large bowl. In a small bowl, whisk together lime juice, agave, salt, and pepper. Add dressing, fresh mint, and fresh cilantro to pineapple mixture and toss gently. Refrigerate for 1 hour. Before serving gently stir in avocado.
