Summer Pineapple Salsa

PineappleLet’s talk pineapple. Pineapple is a sweet tropical fruit that is perfect for summer. (It’s not over yet!) Not only is it tasty, but it also contains bromelain. This is a mixture of enzymes that helps to digest protein and is helpful in reducing inflammation and getting rid of bloat! Don’t forget that pineapple is packed with vitamin C, copper, vitamin B6, vitamin B1, magnesium, and fiber.

This recipe is perfect to satisfy that sweet and salty craving. Use tortilla chips or pita chips to dip. Bring this to your next cookout, barbecue, or beach weekend trip and watch it be devoured. Maybe you’ll avoid that second dessert if you’ve got some sweet pineapple in sight!


Summer Pineapple Salsa

Ingredients

Summer Pineapple Salsa

  • 1 pineapple, chopped
  • 2 mangoes, chopped
  • 1 avocado, chopped
  • 1 tbsp fresh mint, chopped
  • 2 tbsps fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • Juice of 1 lime
  • 1/2 tbsp agave
  • Pinch of salt and pepper

Directions

Combine pineapple, mango, and red onion in a large bowl. In a small bowl, whisk together lime juice, agave, salt, and pepper. Add dressing, fresh mint, and fresh cilantro to pineapple mixture and toss gently. Refrigerate for 1 hour. Before serving gently stir in avocado.
