November Meal Roundup

Here is a roundup of my November eats:

image6 Crab Cake with Asparagus and Sweet Potato Fries

A little taste of summer. Sweet and spicy crab cakes with some fresh sauteed asparagus. In a skillet over medium heat add olive oil then cleaned asparagus. Saute for 5 minutes, turn asparagus and saute for another 5 minutes. Done! Plus one of my favorite convenient sides from Alexia – sweet potato fries.

Sunday funday apps and drinks with girlfriends is always a great way to end the weekend. This is the last time I went to Derek’s for the before they closed unexpectedly! I’ll miss the fun drinks and delicious food options.


image6 (2)Roasted Fall Veggies

Roasting vegetables is one of my favorite meal prep tricks. Brussels sprouts, sweet potatoes, and red onion are perfect for fall meals. Preheat the oven to 450 degrees F, toss vegetables in olive oil and sprinkle with salt and pepper. Roast for about 20 minutes. Make a batch to use all week.

This is hands down my favorite place to eat in Manayunk. Margaritas and Mexican food. What else could you want! The fish tacos are grilled tilapia with a chipotle mayo, cabbage slaw, avocado, and radish. They are always my go-to along with the chicken nachos of course.

Frozen Yogurt @ Whirled Peace, Philadelphia, PA

This is my fall creation! Spiced apple pie frozen yogurt topped with cinnamon apples, graham cracker crumbs, and chocolate chips. Treat yourself was definitely the mindset with this one.

 


Sushi Lunch @ Yanako, Philadelphia, PAimage5 (2)

A California roll, five pieces of sushi, and a side of miso soup. Filling and packed with protein. Not to mention that you can order Thai in the same. Such a great combination. You can’t go wrong with sushi.

 


image2Stuffed Pepper with Quinoa and Ground Turkey

Not the most flattering picture of this meal… But delicious nonetheless! Preheat oven to 350 degrees F. For the filling: cooked quinoa, cooked ground turkey, sauteed kale, and mushrooms. Stuff peppers with filling. Top with cheese and bake for 45-50 minutes. Eliminate the ground turkey for a Meatless Monday meal!
