Sungold Kiwifruit is the smooth, yellow version of a green kiwi. It tastes slightly more sweet and tropical, but has the same nutrition benefits as its green counterpart. Kiwis are good sources of potassium, fiber, folate, vitamin E and vitamin C. A whole Sungold Kiwifruit has 130 mg of vitamin C. That’s over two times the recommended daily allowance (RDA)! Both types of Kiwifruit also contain actinidin which is a digestive enzyme that helps break down proteins. This can help improve digestion after a meal. I had so much fun creating this dish with a fruit I had never tried! The Sungold kiwis were absolutely delicious.
Shrimp Tacos with Kiwi Salsa
- 1/2 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 Zespri sungold kiwis
- 1 scallion, chopped
- 2 tbsp red onion, chopped
- 1/4 cilantro, chopped
- 1 clove garlic, minced
- 1/2 jalapeño, diced
- Juice 1 lime
- Salt and pepper
- 1/2 avocado
- 1/4 cup nonfat plain Greek yogurt
- 4 whole wheat tortillas
In a bowl, combine Kiwifruit, scallions, red onion, cilantro, garlic and jalapeño. Season with salt and pepper and squeeze in juice of one lime. Stir to combine and set aside. In a small bowl, mash 1/2 avocado into a paste. Add nonfat Greek yogurt to create your crema. Season with salt and pepper and set aside. Heat olive oil in a sauté pan over medium heat. Remove the tails from your shrimp and season with salt and pepper. Add shrimp to hot pan. Cook shrimp on each side for 3-4 minutes until cooked through. Create you tacos by layering avocado crema, kiwi salsa and warm shrimp. Enjoy!
